- Thanksgiving 2024:
- only did 1 day brine and added some sage(i *think* it was 2 small sprigs but idk). would use more herbs and do 2 days
- Want to try with paprika and maybe chipotle. something for depth (12/3/24)
thanksgiving 2025:
- 14lb turkey
- two gallons water
- 4.5oz sea salt
- 2 gala apples
- 2 heads garlic
- 1 onion
- 1 tb black pepper (lightly crushed)
- 1 lemon
- 3/4 cup brown sugar
- bunch of thyme
- 1 tsp dried cracked rosemary
- 8 cloves (lightly crushed)
- 1 tsp cinnamon
